My first baking experiment was a complete disaster. Here is the recipe I used:
Quick Fruit Bread
1 cup flour (I replaced this with 1 cup almond meal)
1 cup whole grain flour (I replaced this with 1 cup coconut flour)
1/3 cup sugar (I replaced this with stevia)
1 Tablespoon baking powder
1/2 teaspoon salt
1/4 cup oil
1 1/4 cups Water or milk, buttermilk, juice, or other liquid (I used OJ)
1 teaspoon vanilla extract
1 cup of blueberries, raspberries, blackberries, peaches, or apples (I used apples)
Preheat oven to 400°. Grease 8″ square pan. In a large bowl, mix dry ingredients. In a small bowl, blend remaining ingredients, except fruit. Add to dry mix, stirring just until ingredients are moistened. Fold in fruit. Spoon batter into pan, spread evenly. Bake approximately 24-28 minutes at 400°, or until toothpick inserted in center comes out clean.
First off, I could not “spoon the batter” because it was so dry and clumpy. My flour mixture completely soaked up all the liquid that I added. It’s in the over now. It’s already been 35 minutes (I turned it down to 375°). It still looks like a pan of dry, raw almond meal with a few bits of apple through it. Do I have to throw it away? Any ideas from anyone??

No help in the universe, I guess. So, this is what I did: I added some apple sauce and a bit of cashew butter (I thought they might act like “binders”) and cranberries, then flattened it all out on a baking tray and baked the shite out of it. It is more palatable – kind of like icky, stale granola bites… But it’s still going in the bin. 😦
